I actually have the EV set up as a shortcut on the 'adj' button...so I bring up the screen, dial in a little minus (usually) and watch the visually the change on the image on the screen. Then I try to find one that seems just a shade below the 100% white saturation limit, take a test photo, and note the effect by previewing with the white saturation set on the display.
This works great for jpeg's, but with DGN I must admit to still feeling my way a little...it can actually produce a little detail even when the JPEG is blown, but I still aim at getting the JPEG below the 100% saturation and let everything else flow from there. (I am a bit to fanatical about this iws!)
