Appealing appetizer

When I walk into this restaurant this blue structure on the wall caught my eye.

It might be a swordfish? It is not a conserved real fish, is it?

It looks like a swordfish, but I do not know if a real one is blue in colour.
This one is man-made. Am sure it is not a real one. Looks very shiny.
